年产8000吨烟熏火腿肉制品工厂设计

摘要:本论文进行了年产8000吨烟熏火腿肉制品工厂的设计。制定产品方案,设计工艺,进行物料衡算、能量衡算,设备的选型,生产车间的工艺布置,劳动人员的配置,辅助部门的规划和技术经济分析。本设计把工厂拟建在广东省茂名市化州市杨梅工业园。项目以新鲜带皮去骨猪后腿为原料,经多种工艺及烟熏最后得到带皮去骨烟熏火腿。经过标准化的机器生产,能减少甚至杜绝个人生产时可能产生的有害物质,其便于贮藏,且具有独特的烟熏风味。项目设计结果为每班生产需要新鲜带皮去骨猪后腿20.64t、食盐592kg、白糖442.72kg、磷酸盐133.28kg、亚硝酸盐5.28kg、异抗坏血酸钠13.28kg。主要的生产设备有熏蒸炉12台、盐水注射机5台、真空滚揉机12台、全自动真空包装机3台、全自动打包机2台。设计的生产车间占地面积约为2997m2,厂区占地面积约为17388m2。设计最后进行技术经济分析,估算投资回收期约为2年。

The Design of an Annual Output of 8000 tons of Smoked Ham Meat Processing Plants

Abstract:This paper carried out an annual output of 8000 tons of smoked ham meat processing plants design. Make product scheme, design process, material balance, energy balance, equipment selection, process of workshop layout, allocation of the labor force, plan auxiliary department and technical and economic analysis. The factory located in Huazhou City, Guangdong Province, Yang Mei Industrial Park in Maoming city. The project with fresh skin to bone ham as raw material, through various processes and smoked finally get the boneless smoked ham with skin. After standardization of machine production, the harmful substances should be reduced or even eliminated which may be produced in individual production, smoked ham for storage, and has a unique flavor of smoke. The result of the design is each class production need fresh skin to bone pig hind leg 20.64t, salt 592kg, sugar 442.72kg, phosphate 133.28kg, nitrite 5.28kg, sodium erythorbate 13.28kg. The main production equipment have 12 automatic smoking oven, 5 saline injection machine, 12 vacuum roll kneading machine, 3 fully automatic vacuum packaging machine and 2 fully automatic binding machine. The floor space of the workshop about 2997m2, and the floor space of the processing plant about 17388m2. The final design is technical and economic analysis, and the investment payoff period is about 2 years.
