摘 要
当今社会,食品行业飞速发展,食品公司越来越多,而食品质量存在的问题也不断。此次我针对微生物对食品污染的现象,通过发现问题、分析问题、解决问题等环节对大头菜工厂设计研究,主要探究了其戎城坊大头菜在生产过程中的霉菌污染问题。在食品工厂中霉菌的污染源很多,它主要通过水、空气、生产设备等渠道污染食品。霉菌能造成食品腐败变质,致使其保质期下降,品质恶化,甚至引起严重的食品安全问题。所以如何防止食品被霉菌污染对当前食品安全生产尤其重要。此外,我通过对调查结果进行分析和思考,还提出了相应的霉菌污染控制措施,希望公司考虑采纳,以更好地确保食品的安全及品质,进一步扩大产品的消费市场。

Today's society, the rapid development of the food industry, more and more food companies, and food quality problems continue to exist. The phenomenon I of microbial food contamination by identifying, analyzing and solving problems and other aspects of plant design study of rutabaga, which mainly explores the Rong City Square kohlrabi fungal contamination problems in the production process. In the food sources of mold in many plants, it is mainly through contaminated food, water, air, production equipment and other channels. Mold can cause food spoilage, resulting in decreased shelf-life, quality deterioration, and even cause serious food safety issues. So how to prevent mold contamination of food is particularly important in the current food safety in production. In addition, I passed on the findings of analysis and reflection, but also put forward the corresponding mold pollution control measures, the company hopes to consider adopting, in order to better ensure the safety and quality of food, to further expand the consumer products market.
