摘  要

山楂酒是以山楂作为主要原料加工制成的果酒，拥有山楂的独特风味，含丰富的维生素C，可以强化免疫系统，促进伤口的愈合和对铁质的吸收等；富含肌醇和氨基酸，可以抑制抑郁症，并且补充脑力所消耗的营养；它所拥有的低钠高钾的完美比例，能够补充熬夜加班所失去的体力，兼有营养、保健功效。

目前，山楂酒行业生产中以发酵酒为主。我国山楂酒消费市场的发展前景很乐观，需求量大，消费者大多为习惯性购买。随着山楂酒市场的持续发展，山楂酒的销量会持续增加。

本设计是对年产2万吨山楂酒工厂的设计。主要包括了山楂原料的选择，生产工艺流程、生产过程的操作步骤及注意事项、生产过程中的各种因子的控制、产品质量控制和产品标准、相关的物料衡算、设备选型和成本核算。初步的营销方案，绘制工厂布置平面图、工艺流程图以及主要设备的三视图。
