摘 要
我国罐头工业不断发展，在生产、科研、设计等方面取得了丰富的经验，积累了大量技术数据。参考罐头工业专业文献并根据市场需求和原辅材料的季节供应 ，根据山东轻工业学院下达的年产500吨牛尾笋软罐头厂工厂设计课题，做了这个工厂设计。
设计第一章简要的介绍了牛尾笋软罐头的发展现状及发展趋势。作为本文第2章重点介绍了牛尾笋软罐头生产工艺，包括原辅材料的供应、产品方案和月产量的确定、罐藏工艺流程以及罐头的检验和储藏。罐藏工艺流程重点介绍了杀菌操作和杀菌理论。
由于牛尾笋软罐头生产的季节性和产品的多样性，本文主要介绍了牛尾笋和青豆的物料计算，并进行了设备选型。
生产车间对照明、通风、供水、更衣、洗手消毒、冷库、厕所设施以及加工设施等进行了设计。对生产车间用水用气量进行了估算。
辅助部分介绍了化验室、机修间和仓库。
最后一章公用系统介绍了给排水、供电、供汽和制冷。然后画出了全厂平面图、车间平面图、工艺流程图和设备图。

ABSTRACT

The workshop is designed for lighting, ventilation, water supply, changing clothes, hand sanitizers, cold storage, toilet facilities and processing facilities. The gas consumption of the production workshop was estimated.
The auxiliary section introduces the laboratory, the mechanics and the warehouse.
The last chapter of the public system describes the supply and drainage, power supply, steam and cooling. And then draw the whole plant floor plan, workshop floor plan, process flow chart and equipment map.
